Bacon and Cheeseburger Puff Pastries
1 lb ground beef
1/3 cup diced yellow onion
season as desired
1 sheet of thawed puff pastry
1 slice of cheese, cut into 4 pieces (or 4 cracker-sized slices)
4 slices cooked bacon (half)
Thaw a sheet of frozen puff pastry for about 30-40 minutes on the kitchen counter. You can find it near frozen pies in the freezer section of your local grocery store. Once thawed, unfold the sheet and place the most floured side on a piece of waxed paper. Using a pizza cutter, cut the dough into four equal squares. In a bowl, combine the beef, egg, sliced onions and seasoning. Form four small patties of beef. Place a patty in the center on each square piece of dough. Top each patty with two halves of cooked bacon and then a piece of cheese. Pull the sides of the dough then pinch the seams around the meat, bacon and cheese. Turn the dough over with the pinched seams down. Beat an egg and a tablespoon of water together. Brush each pastry with egg wash. Using a knife, cut four small slits in the top of each pastry to allow the fat from the meat to escape while cooking. Transfer the pastries to a greased baking dish. A drip pan works great for this. Bake 30 to 35 minutes at 400 degrees. Cooking times may vary. Top with your favorite burger toppings and enjoy! I place mine on a bed of lettuce, then drizzle a mixture of ketchup and mayo on top with a pickle spear on the side. This recipe makes four bacon and puff pastry cheeseburgers.
Note: You get two sheets of frozen puff pastry per box, so you can easily double the recipe by using both sheets to make eight bacon and cheese puff pastries.
