Lila Jai ââColello will bring Flakely, her gluten-free baked goods, to Pinwheel Provisions in Narberth, Montgomery County, for a seven-week pop-up this summer.
From Wednesday June 30, breads, some croissants and other freshly baked pastries that morning will be on sale Wednesdays and Saturdays from 2 p.m. to 6 p.m.

The full menu will be posted on Instagram every Tuesday and Friday before the opening of the pop-up.
Items can include cinnamon buns, do-it-yourself pizza dough, pop-tarts from scratch, and crispy baguettes. All items sold by Flakely are gluten free.
âAfter years of unease, I was diagnosed with celiac disease in 2015, and it’s hard to say which was more difficult: giving up my dream of working in professional kitchens or giving up croissants,â said Colello, French school graduate. Culinary Institute in New York and worked for Eric Ripert, Wolfgang Puck and Food Network before his diagnosis. “My illness is so severe that I can’t even touch regular wheat flour, so Flakely products are all absolutely safe, even for those with severe gluten intolerances like mine.”
Customers can pre-order for pickup at Pinwheel during the summer pop-up. Also look for pop-tart ice cream sandwiches, a collaboration with MilkJawn, arriving later in July.
Colello also sells frozen and gluten-free bakery products all year round at local retailers like Di Bruno Bros., Primal Supply and South Philly Food Co-op.
She donates 3% of all sales to organizations that help feed those in need in the Greater Philadelphia community; and to organizations that fight for racial and social justice.
